Edamame Bean and Avocado Dip with Mint

There is something truly special about the Summer months and the variety of seasonal produce that’s vibrant, fresh and readily available.

The warmth in the air seems to infuse a renewed energy into the foods we eat and enjoy, transforming meal times that are refreshing, light and utterly satisfying.

It’s this time of year, I enjoy experimenting in the kitchen with different flavours. And, during these sun-soaked days, we often find ourselves looking for foods that might not be as appealing during the cooler months.

For me, Summer is a time that seems to bring a sense of ease and casualness to meal times. What’s not to love about a warm, balmy evening, the sun going down casting a golden glow while we sit in the backyard or enjoy a late afternoon picnic in the park with loved ones gathering around a carefully crafted grazing platter?

This dip recipe is one of my favourites, it’s so quick and easy to prepare and is one I love to include on my grazing platters as its vibrant green hue is really appealing. Plus, this dip can be made a day ahead thanks to the lemon which helps preserve the avocado.

Edamame beans bring a mild sweet flavour with a nutty undertone to the smooth and creamy richness of avocado. With the addition of pistachio kernels for a delicious crunch, mint and lemon help enhance the overall flavours. This dip is so good, it will be on high rotation!

INGREDIENTS

100g edamame beans
1/2 avocado
Small handful of pistachio kernels
15 - 20 mint leaves
Zest and juice of a lemon
A glug of EVOO Olive Oil
Salt and pepper to taste

METHOD

  1. Using a knife and chopping board, chop all of the ingredients for a chunky dip and place into a bowl, stir well to combine. Or place all of the ingredients in a food processor and pulse until desired consistency.

  2. Taste the dip to ensure you have a great balance of flavours - particularly mint, lemon, salt and pepper. Then place into a small serving bowl and serve with Mette is Baking Nordic crackers. Enjoy! We’d love to see your creations - tag us on Instagram @metteisbaking
