100g Edamame Beans ½ avocado Small handful of pistacio kernals 15-20 mint leaves Zest and juice of a lemon A glug of EVOO Salt and pepper to taste.   Keep tasting to make sure you have a great balance of the mint, lemon, salt and pepper. I chopped it all on a chopping board to get it a little chunkier and keep more control of the consistency.  However, you can also put it all in a food processor and pulse until desired consistency.
