Edamame Bean & Avocado Dip

  • 100g Edamame Beans
  • ½ avocado
  • Small handful of pistacio kernals
  • 15-20 mint leaves
  • Zest and juice of a lemon
  • A glug of EVOO
  • Salt and pepper to taste.

 

Keep tasting to make sure you have a great balance of the mint, lemon, salt and pepper.

I chopped it all on a chopping board to get it a little chunkier and keep more control of the consistency.  However, you can also put it all in a food processor and pulse until desired consistency.
