Festive Grazing Boards for the Holidays: Part 2

As promised in my last blog ‘Christmas Tree Grazing Board’ it’s time for part two of our festive grazing board series and I have another board to share with you… this time it is a beautiful Christmas Wreath.

There’s something undeniably festive about a wreath, brimming in traditional Christmas colours of green and red - and when the wreath is made from fresh, delicious and vibrant ingredients, you can feel good about snacking on it!

We all know the holiday season is a marathon, not a sprint and Christmas, whether we like it or not, tends to be the season of indulgence for many of us, but it doesn’t have to be complicated and it doesn’t have to be unhealthy. This edible Christmas Wreath is proof that festive food can be fun, fresh, simple and taste great.

Featuring your favourite hummus dip as a base (or any other dip you have on hand) and decorated with sweet, juicy cherry tomatoes, bright pomegranate seeds and fresh herbs that not only add flavour but a wonderful fragrant aroma. And, for the finishing touch - no wreath is a wreath without a bow and I’ve managed to make a delicate bow out of cucumber ribbons that’s almost too pretty to eat (step-by-step instructions are included below - it’s very easy and simple to make!).

What I love the most about this Christmas Wreath is how versatile it is - whether you are hosting Christmas lunch, need to take a plate to a gathering, heading away on holidays or need to whip something up quick when those unexpected guests arrive, this Christmas Tree Wreath can be made in minutes.

How to make a Christmas Wreath Grazing Board

INGREDIENTS

1 x large tub of hummus (or your favourite dip)
Fresh basil leaves (rosemary and mint would also be a great option)
Pomegranate seeds
1 x punnet cherry tomatoes
1 x continental cucumber (for the bow)

METHOD

  1. On a large round serving platter, spoon the hummus (or dip) into a ring shape creating a ‘wreath’.

  2. Decorate the hummus ring by placing fresh basil leaves. Then sprinkle pomegranate seeds over the hummus and add cherry tomatoes over the wreath.

  3. At the top of the wreath, carefully place the cucumber bow.

  4. Serve with Mette is Baking crackers - these can be placed on the sides of the grazing platter or in a seperate bowl to the site. Enjoy!

How to create a bow from a cucumber

  1. Wash and dry the cucumber, then using a vegetable peeler, peel long thin ribbons, discard the first few ribbons as you need the inside of the cucumber to create the bow. Be sure each cucumber ribbon has the cucumber skin intact on either side.

  2. Take one piece of cucumber ribbon and fold each end under to meet in the middle, creating a loop. Place this piece at the top of the wreath.

  3. Take a second piece of cucumber ribbon, trim the ends on an angle and gently fold it in half to form the ‘ends’ of the bow. Place it under the loop.

  4. Using a third piece of cucumber ribbon, create another loop as in step 2 and carefully lay this on top of the first loop - this needs to be a little smaller than the first loop so it can still be visible.

  5. To create the bow’s know, take a fourth piece of cucumber ribbon and wrap it around the middle of the two loops, tucking the ends in neatly underneath.
