Cheese Bread Goodness with a Sumac Zing!
Is there anything better than warm cheese bread straight out of the oven? I think you’re going to love this recipe - hot, crusty bread filled with melted, gooey cheese and Mette is Baking’s Scandi Summer Dip Mix flavours of sumac, lemon myrtle and black pepper… mouth-watering, right?
Cheese Bread Inspired by the Australian Outback
This cheese bread recipe was created on the road by Karen - a talented chef and a very good friend of mine who is currently travelling around Australia in a motorhome with her husband Vince and their cat Goji.
Karen created this delicious cheese bread while crossing the Nullarbor Plain - you just never know when inspiration strikes - as they explored the vibrant, colourful landscape and camped for three nights at Boolaboola.
The cold winter nights on the Nullarbor, called for cosy warm campfires and while this cheese bread was originally baked in a camp oven, you can easily recreate this in your own oven at home. Imagine the delicious aromas of freshly baked bread, sumac and lemon myrtle filling your kitchen. Yum! Don’t blame Karen or I if the fresh, warm cheese bread you bake is gone in seconds - it really is that delicious.
Adventures on the Road - A Taste of Australia
In 2023, Karen and Vince made a life changing decision to sell their home in Margaret River, Western Australia and their wedding car business to travel. Although they have only made it so far to South Australia, both Karen and Vince often joke they are eating and drinking their way around Australia.
“We love food,” says Karen. “We also love looking at street art, silo-murals, anything that’s old-vintage-classic such as visiting museums, looking at cars, buildings, boats and jetties, visiting Australia’s Big Things and campfire cooking, hiking, wine and it goes without saying more food.”
I am in awe of Karen and Vince’s sense of adventure and embracing their life on the road. For those who know me well, will know my love for travel. It’s no secret. Having spent many years travelling and living and working abroad, I believe every destination has something special to offer - I love taking time to discover the unique things to see and do and most importantly for me (and Karen and Vince) is to experience the FOOD.
Whether it is a beautiful, coastal town south of Perth or an unfamiliar city on the other side of the world, each destination has a way of opening our eyes to new possibilities, letting us experience new adventures, enjoy what is on offer and meet new friends along the way.
Recipe - Nordic Inspired Cheese Bread with Scandi Summer Dip Mix

INGREDIENTS
1 x 25g Mette is Baking Scandi Summer Dip Mix
1 x Lauke Multigrain, Soy and Linseed Bread Mix
Cream cheese
Sour cream
Grated cheese
Green olives
1 cup water
2 tsp yeast
METHOD
In a mixing bowl dissolve yeast in water.
Add bread mix and knead for 6 - 10 minutes.
Allow to prove and double in size for 30 - 40 minutes.
Transfer to a floured surface, knock down and lightly knead into balls.
In a seperate mixing bowl combine cheeses, sour cream and dip mix.
Roll dough into balls, flatten, fill with cheesy dip mixture and garnish with an olive.
Bake for 30 minutes turning twice. Rolls are baked if they sound hollow when tapped.
Tip - Brush dough lightly with water before baking to ensure a really ‘crusty’ crust.
