Marinated Chicken with Pikant Dip Mix

Just like this simple, yet flavour packed recipe created by Kate Flower from Kate Flower Food - chicken marinated in Mette is Baking Pikant Dip Mix and Greek Yoghurt. It’s the perfect recipe to enjoy all year round and with minimal preparation and a dish that is full of flavour, you can have this quick and easy meal on the table in just 20 minutes.

Our Pikant Dip Mix combines sweet paprika and red chilli with comforting spices, which we have carefully selected to create a Nordic inspired spice mix with a deep, earthy and robust flavour.  Simply combine our Pikant Dip Mix with creamy Greek Yoghurt and it becomes the perfect marinade base for chicken.

Plus, with just three ingredients the chicken can be prepped the night before, allowing the chicken to marinate and soak up all of our delicious Pikant Dip Mix flavours, all while the marinade helps to tenderise the meat. But if you’re short on time, simply marinate the chicken for 20 to 30 minutes before cooking.

Then pan fry or bake the chicken for an easy mid-week winter warming meal paired with steamed rice and green vegetables or cook the chicken on the BBQ to enjoy on those balmy hot summer nights and serve with a green salad and roast potatoes. We highly recommend pan frying the chicken or cooking it on the BBQ until golden to help caramelise the chicken pieces intensifying the taste and aromatics of our Pikant Dip Mix.

For this recipe, chicken thighs are used as they are full of flavour, have a richer taste and stay juicy and tender during cooking, plus if you have the time to marinate the chicken overnight the thighs will soak up all of the flavours really well. Chicken thighs are also a very versatile and economical cut and can be cooked on the BBQ, pan fried or roasted in the oven, while still retaining their natural juices and tenderness.

INGREDIENTS - Serves 4

1 x Mette is Baking Pikant Dip Mix
1 cup Greek Yoghurt
500g chicken thighs
1 tablespoon oil

Serving suggestion:
Steamed green vegetables and steamed rice
Or
Green salad and roast potatoes


METHOD

1.   In a large bowl, mix Mette is Baking’s Pikant Dip Mix with the Greek Yoghurt and stir well to combine, add the chicken thighs and stir well coating the chicken in the marinade. Set aside covered in the refrigerator until ready to cook.

2.   When ready to cook, take the chicken out of the refrigerator and place bowl on the bench for 30 minutes to allow the chicken to come to room temperature.

3.   Heat a heavy based pan with a little oil on medium to high heat and add the chicken.

4.   Cook turning after 5 minutes and allow the chicken to continue to cook until cooked through (approximately 7 minutes).

5.   Serve the chicken on a bed of steamed rice and with your favourite steamed green vegetables. Enjoy!

 

Recipe Notes – The chicken can also be cooked on the BBQ, roasted in the oven or cooked under the grill.
