A Decadent Dessert - Banana and Greek Yoghurt Pilaf

I’d like to introduce you to my friend, Kate, from Kate Flower Food. Kate is a cookbook author, recipe developer and food stylist with a lifetime of experience in the Western Australian food industry.

You say pilaf, I say dessert

Kate calls this banana and Greek yoghurt dessert a ‘pilaf’, which can be described as a layered dish.

Now, I think Kate was onto something when she created this. Although it might be a dessert, I think this delicious, decadent and creamy dish could actually be enjoyed anytime of the day really, it is that versatile. Breakfast? Why not! Brunch? Absolutely! An afternoon snack? Sure! A dessert? Of course!

This delicious dessert is made with just six ingredients, most, if not all, I am guessing you’ll already have in your kitchen. Featuring Mette is Baking crackers, Greek yoghurt, bananas and honey, not only does this dessert taste decadent, but the mix of sweet versus salty with the added crunch of our crackers and the creamy richness of Greek yoghurt is simply irresistible.

Simple to make and full of wholesome ingredients, it’s the perfect example of how healthy eating can be both easy and indulgent. Plus, it can be made gluten free, by simply using Mette is Baking gluten free Nordic crackers. Treat your family by adding this recipe to your weekly repertoire.

You’ll want to try this Banana and Greek Yoghurt Pilaf at home - trust me!

INGREDIENTS (SERVES 4)

1 x pack of Mette is Baking Nordic Crackers (Traditional or Gluten Free) crushed into small pieces, a mix of sizes from crumbs up to half a centimetre
4 tsp brown sugar
Cinnamon, to taste
2 ripe bananas, peeled and sliced in half through the middle, then down the centre (you will need four lengths from each banana or alternatively slice each banana into thin rounds)
4 Tbsps honey or to taste
2 cups Natural or Vanilla Greek Yoghurt

METHOD

  1. In a small bowl, mix cracker crumbs, cinnamon and brown sugar.

  2. Divide half the crackers across four serving glasses and drizzle with a little honey.

  3. Top evenly with the Greek Yoghurt.

  4. Lay down a second layer of cracker crumbs, drizzle with honey and top with two banana pieces per serving glass and finish with a little cracker crumbs and a final drizzle of honey.
